Strawberry Granola - Two Peas & Their Pod

I love making homemade granola because I love eating homemade granola. A few favorites include: lemon blueberry, almond butter, peanut butter, chocolate, and chocolate chip cookie granola clusters.

I also love this Strawberry Granola, especially during the spring and summer months. The strawberry flavor is so good!

The granola is sweet, crunchy, and made with pantry staples. When the granola comes out of the oven I stir in freeze-dried strawberries. I also love serving the granola with yogurt and fresh strawberries to maximize the strawberry flavor.

Ingredients

  • Old fashioned oats– make sure you use old-fashioned oats (rolled oats) and not quick oats.
  • Coconut– you can use sweetened or unsweetened coconut, both work great!
  • Nuts– I use pecans and almonds, but walnuts would be good too!
  • Pepitas– for a boost of magnesium, protein, and I love the crunch!
  • Flaxseed meal– a great source of fiber and omega-3 fatty acids.
  • Cinnamon– I love adding cinnamon to granola, so good!
  • Sea salt– always salt!
  • Coconut oil– melted and slightly cooled. If you don’t want to use coconut oil, you can use melted butter.
  • Pure maple syrup– to naturally sweeten the granola.
  • Vanilla extract– use pure vanilla extract.
  • Freeze-dried strawberries– for the best strawberry flavor. Stir the strawberries in AFTER the granola comes out of the oven so they don’t burn.
  • Chocolate chips– chocolate chips are optional! I add them if we want an extra sweet granola. White chocolate chips make the granola taste like strawberries and cream! Dark chocolate chips and strawberries are delicious too.

How to Make Strawberry Granola

  • Preheat oven to 325 degrees F. Line a large-rimmed baking sheet with parchment paper and set aside.
  • In a large bowl, combine the oats, coconut, almonds, pecans, pepitas, flaxseed, cinnamon, and sea salt.

  • Add the melted coconut oil, maple syrup, and vanilla extract. Stir until mixture is well combined.

  • Transfer the mixture to the prepared baking sheet and spread in an even layer. Use a spatula or the bottom of a measuring cup to press the granola down in an even layer.
  • Bake for 25 to 30 minutes or until granola is slightly golden brown. DO NOT STIR, but make sure you rotate the pan halfway through the baking time.

  • Remove the pan from the oven and let the granola cool completely on the pan without stirring.
  • When the granola is completely cooled, break into clusters and stir in the freeze-dried strawberries.
  • If you want a sweeter granola, you can stir in white chocolate chips or dark chocolate chips! Both go great with the strawberries.

Serving & Storing Tips

  • Serving Suggestions– Serve the granola with yogurt, milk, use it as a topping for ice cream, or eat by the handful. It is also great sprinkled on top of waffles, French toast, or pancakes.
  • How to Store– Store the granola in an airtight container or jar in the pantry for up to 1 month. You can also freeze the granola in a freezer bag or container for up to 3 months.
