You only need a handful of ingredients and a blender (or food processor) to whip up this flavorful dressing! It only takes 5 minutes to make and you can keep it in the fridge for up to one week.
Drizzle it over your favorite salads! It is also great with grilled chicken, fish, steak, tacos, and more! If you like cilantro, I guarantee you are going to love this simple vinaigrette!
Ingredients
- Cilantro– remove the stems and pack the leaves into a measuring cup. You will need 2 cups. Buy 2 bunches to be safe.
- Shallot– you can find shallots in the produce section by the garlic. A small shallot is fine.
- Garlic
- Lime Juice– always use fresh lime juice, not bottles.
- Red wine vinegar
- Oil– you can use olive oil or avocado oil.
- Kosher salt and black pepper– to taste!
How to Make Cilantro Lime Vinaigrette
- In a blender, combine the cilantro, shallot, garlic, lime juice, red wine vinegar, oil, salt, and pepper.
- Blend the dressing until smooth. It will be a vibrant green color!
