15+ Hearty & Cozy Baked Oatmeal Recipes

One thing I know for sure about AK readers: you all LOVE baked oatmeal. Every time I post a new oatmeal bake or recipe for baked oatmeal cups I see the excitement roll in both on the blog and on social — for good reason! I’ve been a baked oatmeal lover for years now because it makes such an easy, satisfying breakfast that you can meal prep or freeze for later.

SO it’s not surprising that I have over 15 incredible healthy baked oatmeal recipes on the blog. Oatmeal cups included! I love dreaming up brand new flavors, mix-ins, and toppings for baked oatmeal because the options are truly endless. These recipes are packed with fiber, plenty of protein and whole grains to keep you full and satisfied until lunch. Plus, they’re great for kiddos and easy to customize!

Choosing the right oats

It’s very important to use rolled oats when you’re making baked oatmeal because steel cut oats will not give you the right texture. To keep the recipes gluten free, simply use certified gluten free rolled oats! Quick oats will likely work well, too, you may just need to use a bit more than the recipe calls for.

Turn your baked oatmeal into oatmeal cups

Yes, you can easily turn any oatmeal bake into cups or muffins! A great on-the-go option for busy weeks.

  1. Prep your pan. Add muffin liners to a muffin tin and spray with cooking spray to prevent sticking.
  2. Divide the batter. Divide the baked oatmeal batter into the muffin tin — you should get around 10-12 oatmeal cups.
  3. Bake & serve. Bake for 20-25 minutes until the oatmeal cups are set and enjoy!

Freeze your oatmeal bake for later

Feel free to freeze your whole baked oatmeal, individual slices, or oatmeal cups for later! It’s such a great way to meal prep months ahead of time.

  • To freeze: once your baked oatmeal has completely cooled, cut it into 6 squares/slices and wrap each square in plastic wrap and tinfoil. You can also freeze the entire baked oatmeal for later by wrapping it well and placing it in the freezer.
  • To reheat: when you’re ready to eat it, place an unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. To reheat the entire baked oatmeal, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.
