I’m a big fan of appetizers that are easy and versatile enough to double as snacks. And just like my roasted chickpeas with Parmesan, easy candied pecans, and marinated olives, these Parmesan crisps are no exception. They’re ridiculously easy and fast to make—you only need 4 ingredients and about 10 minutes before calling them done. They’re sophisticated looking enough for an appetizer, but also great for a quick and healthy, high protein, low-carb snack. Not to mention they make a stellar topper on my tomato basil soup, or a yummy addition to Caesar salad, in lieu of croutons.

What’s in These Parmesan Crisps

The best thing about this recipe is how low-maintenance it is—you only need 4 ingredients. Here’s what you need to make these Parmesan crisps:

  • Parmesan (use a good aged one)
  • fresh rosemary
  • fresh thyme
  • black pepper

If you wanted to mix these up a bit, you could easily swap out different herbs or add spices like cayenne pepper, garlic powder, or everything bagel seasoning—any of these would be delicious.

*Resist the urge to add salt. Parmesan is already salty, so it’s really not necessary here!

How to Make Parmesan Crisps

These Parmesan crisps come together super fast and easy, in only two steps. Here’s how to make them:

Mix and mound. Grate the Parmesan on the medium size side of your box grater (so you get fine shreds, but not a powder). Add the cheese, herbs, and freshly ground pepper to a medium-sized bowl and toss to combine. Scoop little mounds (a heaping tablespoon-full) of the cheese onto a parchment or silicone-lined sheet pan, spacing an inch or two in between.

Bake the crisps. Bake in a 400°F oven for about 5-8 minutes, or until the crisps are nicely golden brown (keep an eye on them after the 5-minute mark, making sure they don’t burn). Let cool on a cooling rack for a few minutes before serving.
